Recipe of the Week

CANDIED GINGER by Elisabeth Bailey

Candied ginger is delicious chopped and added to baked goods, or you can eat it on its own like candy. If you have a candy thermometer use it; if not, you can still make this recipe, but you’ll just need to keep a close eye on the syrup as it cooks.

Ingredients

1/2 pound fresh ginger, peeled and thinly sliced

2 cups white sugar, plus extra for coating the ginger

2 cups water

Directions

Combine ginger, 2 cups sugar, and water in a large pot and bring to boil over high heat. Reduce heat to medium and simmer unstirred until temperature reaches 225°F or takes on a “thick” appearance.
Carefully remove pot from heat. Cover and allow to stand overnight.

The next day, heat the ginger over low heat until mixture is warm but not hot. Strain through a mesh colander or strainer, allowing to drain for at least 1/2 hour.  If you wish, you may save the syrup, refrigerated, and use it for other recipes.
